This Festive Bikini – How to Make It

We present a home-style interpretation of a drink from the seasonal cocktail list. It's a large-volume prepared mix that is bursting full of flavours of a holiday season, which makes it excellent for hosting a celebration. Reserve the remaining syrup for breakfast cocktails, sweets, or for another batch of bikinis.

200ml fresh lemon juice
500g fine sugar

For the Cocktail (yields 850ml, serving 10)

For the Batch Mix: Pour all the liquid ingredients into a large bottle, leave to sit for 60 minutes, then strain preferably using muslin, making it perfectly clear.

For serving: Pour 85ml of your cocktail base to a cocktail shaker packed with ice, and agitate gently for one minute until cold. Filter into a chilled martini glass or similar, top with the cranberries and finish with a light spray with the mandarin essence over the drink.
